Roast Beef and Horseradish Slaw Sandwich


Horseradish has become a regular in my garden and by default a staple in my produce bin. 
This root happily lives in my produce bin for months on end, just waiting to be grated into a cream sauce, cocktail sauce or coleslaw recipe. 
This sandwich is quick and easy, with gourmet results.  Serve with additional slaw on the side. 












Horseradish Slaw Recipe from :  Nancy’s Notebook
Serves :           lots                                       Prep Time:    5 minutes                               Cook Time: one hour in refrigerator
INGREDIENTS
½ head green cabbage
1 large carrot
Grated fresh Horseradish- to taste ( I use about a tablespoon)
½ cup REAL Mayonnaise
2 tablespoons or so of apple cider vinegar
1 tablespoon sugar
Salt and pepper to taste


DIRECTIONS
Shred cabbage and carrot .
Slice green onion.
Combine all ingredients together.
Refrigerate Cole Slaw for at least one hour.  Taste to adjust seasoning

Roast Beef and Horseradish Slaw Sandwich
Serves : 2                                                 Prep Time: 3 min                                   Cook Time: 1 minute
INGREDIENTS
2 Crusty sandwich rolls
½ pound Deli sliced Roast Beef
Horseradish Slaw
Salt and Pepper

DIRECTIONS

Slice rolls open and lightly toast under broiler.
Lay roast beef on roll, cover with horseradish coleslaw. 
Cut in half and enjoy!
