Easy Red Potato Salad - Mayo free Recipe


A simple spring potato salad requiring minimal preparation is a staple in my refrigerator.   No peeling required!
And since no mayo is used, it is great for a picnic or potluck where refrigeration is a concern.












Easy Red Potato Mayo-free Salad Recipe
Serves : 8-10                                             Prep Time: 5 minutes                                Cook Time: 15 minutes
INGREDIENTS
2 pounds  very small red potatoes (b size), cut in half
1 cup chopped onion
1 cup chopped celery
3-4 cloves garlic, smashed with side of knife
¼ cup prepared Italian salad dressing
¼ cup cider vinegar
3 tablespoons olive oil
Salt and pepper to taste

DIRECTIONS
Wash and cut potatoes in half.  In large pot filled with salted water, bring potatoes and garlic to boil.  Reduce to simmer and cook for 12- 15 minutes until potatoes are cooked and can be pierced easily with knife. 
While potatoes are cooking chop onion and celery and add to large mixing bowl. 
Drain potatoes and garlic.  Add hot potatoes to bowl with vegetables.  Add dressing, vinegar and oil.  Toss to coat and combine.  Cool and refrigerate for 2 hours before serving.  Taste before serving to adjust seasoning with salt and pepper.
