Corned Beef Recipe

A Simple preparation that is great for Reubens and other sandwiches.








Corned Beef Recipe
Serves : 8                                                 Prep Time:    5 minutes                               Cook Time: 2 1/2 to 3 hours
INGREDIENTS
1 Corned beef brisket (4 lbs)
1 large yellow onion cut in half with root and skin in tack
4 ribs of celery cut to fit in pot
2-3 carrots or handful of baby carrots
10-15 whole pepper corns
½ teaspoon kosher salt

DIRECTIONS
Place the brisket into a pot just large enough to hold the meat, add the onion, carrot, celery and whole black pepper. 
Cover with water.
Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender.
Remove from the pot and thinly slice across the grain. Serve with potatoes and cabbage that you add to pot during last ½ hour of cooking or on sandwich.  Real rye bread please with brown mustard.
