Crash Potatoes

Quick and easy recipe for potatoes.  Great as an alternative for mashed or baked potatoes. 
I often serve these with grilled steaks or pork chops for a simple, yet elegant side dish for bbq meat. I first found this recipe on the pioneer womans blog here





Crash Potatoes Recipe
Serves : 4                                                 Prep Time: 10 min                                  Cook Time: 45 min
INGREDIENTS
6 small red potatoes
3 Tablespoons Olive Oil
Kosher Salt
Black Pepper
1 Tablespoon fresh rosemary
DIRECTIONS
Bring a pot of salted water to a boil, add and cook potatoes until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.
