Chile Relleno
Fresh poblano peppers seem to have become commonplace recently in my New Jersey produce markets. Hurrah! I am a huge fan of Chile Relleno at Mexican restaurants and I can now make it at home.

Chile Verde
Recipes slowly change and get updated based on what is available at the time. Here is a great example of an updated version of green chile and pork stew that Irecently made for my son’s Spring Break homecoming. You'll notice that I had more time and more fresh produce available in my kitchen than I did in December of 2004 when I first made this stew.

Carnitas Soup Recipe- Black Bean, Corn and Kale Pork Soup
This soup grew out of my frugal nature. After making Carnitas, I tasted the braising liquid and decided that it was to good to just toss it down the drain. I poked around my pantry and came up with this soup recipe.

Carnitas – Mexican Braised Pulled Pork Recipe
Carnitas is my husband’s all time favorite meal at our local Mexican restaurant. I have tried a few different recipes, while all have been good, he still thinks the restaurant's version is better. I am on track to master his favorite, so look for other Carnitas recipes in future posts.
Currently , this is my favorite carnitas recipe.
