Ginger Miso Dressing Recipe

An American Japanese restaurant style salad dressing that is great served over some crispy lettuce with a few tomatoes and cucumber slices. 

Ginger Miso Dressing Recipe
Serves :    ~11/2 cups                                               Prep Time:   5 min                               Cook Time:1 min
INGREDIENTS
1/4 cup canola oil
1/4 cup rice vinegar
3 tablespoons mild or sweet miso
1 tablespoon dark sesame oil
1 tablespoon sugar
1 tablespoon honey
2 medium carrots, (8 baby carrots) roughly chopped
1 ½  inch long piece fresh ginger, cut into thin coins

DIRECTIONS
Put all ingredients except salt and pepper into a blender and pulse a few times to mince carrots. Then let machine run for ½ a minute or so, until mixture is smooth. Taste and add salt and pepper to taste.
