Tomato Avocado Pasta Salad Recipe

I often find that I have a few tomatoes and an avocado or two that are ripening faster that I can come up with a plan to use them.  I will toss them together and add a splash of oil and vinegar and anything else I have at hand. 
Think Capresse Salad with Avocado instead of cheese.  The pasta was a last minute afterthought to turn the salad into a more substantial lunch.  It worked! 







Tomato Avocado Pasta Salad Recipe Recipe
Serves :    2-3                                             Prep Time:  5 minutes                                 Cook Time: 12 minutes
INGREDIENTS
1 cup cooked whole wheat pasta
5-6 ripe tomatoes- chopped
1 small sweet onion chopped
1 clove minced garlic
1 ripe avocado, chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and pepper

DIRECTIONS
Combine all ingredients and toss well.  Let sit for 10 minutes for favors to combine and serve.
