Whenever pork loin goes on sale, I find myself with at least one whole loin that I quick turn into a week’s worth of dinners including my Chile Verde. After chopping, stewing and packaging up the week’s meals, I am left the burning question of with what to serve for dinner. Marinade Pork Chops on the grill with a simple sauce are a frequent choice.
So on this warm Saturday in March, I fired up the grill and whipped up some blue cheese sauce to accompany the pork with asparagus and tortellini.
Grilled Pork Chops with Blue Cheese Cream Sauce Recipe Serves : 4 Prep Time: 25 min Cook Time: 20 min INGREDIENTS 4 thick-cut pork chops, about 2 lbs 5 cloves garlic- minced ¼ cup kosher salt 3 Tbsp Sugar 1 Tbsp ground pepper 2 cups water ½ cup Blue Cheese Cream Sauce DIRECTIONS Marinate the pork chops in Ziploc bag with garlic, salt, sugar, pepper and water for at least 20 minutes, even better, two hours. Turn occasionally to insure good coverage. Heat the grill on high until very hot. Place chops on grate and lower direct burners to low and indirect burners to med/ high. Cover grill and cook the chops to desired doneness, 5-7 minutes per side. Allow to rest for 10 minutes. Serve with Blue Cheese Cream sauce, tortellini and Asparagus. Crusty bread is a necessity for extra cheese sauce. |
