Homemade Toasted Almond Joy Egg Recipe.

Recently when I made a batch of Irish Potato Candy for a gathering, a good friend commented that the filling tasted just like the celebrated Chocolate Coconut Eggs from a now defunct local candy shop. Taking that as a challenge, I decided to try a chocolate coated version.  And feeling like a nut, (a la the old “Almond Joy” vs “Mounds” commercial)  I added toasted almond to the mix.

Greek Turkey Meatball Sub

Once you have made Greek Turkey Meatballs you can serve them in a variety of ways.  I made a meatball sub with them as an alternative to serving on a pita for lunch one day.

Greek Turkey Feta Meatball Recipe with Tzatziki Sauce

Inspiration for recipes can come from the strangest places, even a passing glance at morning show television  . . .

Tzatziki Sauce

Tzatziki Sauce is made with yogurt usually served as an accompaniment to meat, or as a sauce on gyros and souvlaki.

Tilapia with Tomatoes and Capers

This is the very first recipe from handwritten recipe notebook circa 2004.  The tilapia was so good, it motivated me to try to organize my recipes.  I decided to move  from index cards, torn magazine articles and post it page markers throughout my cookbooks, to actually document my kitchen experiment in a running notebook.

Chile Relleno

Fresh poblano peppers seem to have become commonplace recently in my New Jersey produce markets. Hurrah!  I am a huge fan of Chile Relleno at Mexican restaurants and I can now make it at home.

Japanese Pizza Recipe -- Okonomiyaki

I have been meaning to try Okonomiyaki for some time now.  I’m not sure where I first stumbled upon it, but the concept of cabbage pizza was too good to pass up.

Everything Oat Soda Bread Recipe

I have made Heidi’s Oat Soda Bread twice now and have loved it both times.  I love the loaf pan aspect of this soda bread which makes using this bread for sandwiches or toast much easier than  typical soda bread recipe.

Tomato Curry Soup with Cumin, Cinnamon & Honey

I stumbled across this soup recipe today on Dinner Tonight as I scanned the what's cooking links on the side of this page.  It sounded perfect for my dinner tonight. The outside temperature dropped quickly today from high 60s to  mid 40s as a cold front moved into the region to push out the rain.  Soup was just what I needed to warm my bones.

Pork Fried Rice

First off, this recipe is much easier than the ingredient list would have you believe.  This rice is one of my go to recipes for leftover pork chops.  It is perfect for a week night when everyone is on different schedules or for stocking the refrigerator for late night raids.

Come on, admit it, you  love finding Chinese takeout in the refrigerator . . . Especially, if it is really great Chinese food.

Quick and easy recipe for potatoes.  Great as an alternative for mashed or baked potatoes.
